Vegan Green Chile Stew
Classic New Mexican Green Chile Stew uses pork.

- one tsp Onion Powder
- one Yellow Onion, diced
- two Carrots, diced
- two Stalks Celery, diced
- four-5 Cloves Garlic
- two Cups Vegetable Broth
- 2 Cups Water
- one tsp Oregano
- one cup dried, rinsed, Pinto Beans
- three Yukon Gold Potatoes, cubed
- 15oz Can Fire Roasted Tomatoes
- 24oz package deal Pick New Mexico Green Chiles
- ¼ cup Lime Juice
- ¼ tsp Salt
- ¼ tsp Ground Pepper
